Winemaking: Hailing from an 80 year old patch of Zibbibo vines planted to pumice rich soils referred to locally as 'Soki Soki.' The wine sees 7 days of maceration before transfer to old barrels for a few months, the process lending a dash of structure and direction to the classical plushness of the varietal.
