Fattoria Mani di Luna 2016 Checcarello
The Sangiovese Checcarello, like the other wines, is pressed with the feet to leave many grapes intact, resulting in partial carbonic maceration. Fermentation on the skins with indigenous yeasts (spontaneous) without temperature control on small cement and stainless steel tanks. Maceration on the skins for 15 days. Aging on fine lees with repeated steel batonnage for 9 months. Transfer and bottling in days of fruits and waning moon (according to the biodynamic lunar calendar), with a clear and clear sky (high atmospheric pressure). Bottled by fall without any clarification or filtration. Stop for 3 months in the cellar before being put on the market.
Checcarello is a Sangiovese with a light ruby red color, fresh aromas of wild strawberry, raspberry and cherry, full-bodied taste of good acidity. With its wild character it goes very well with a braised or even on a plate of guinea fowl and black olives.
